Kitchen Code Pro

Restaurant compliance services in Pensacola, FL

Pensacola kitchens answer to a different rulebook than their neighbors across the Alabama line. The Florida Fire Prevention Code governs the exhaust hood over the cook line, and the Emerald Coast Utilities Authority (ECUA) regulates what goes down the drain. The two recurring jobs are the same everywhere: get the hood system inspected and cleaned on schedule, and pump the grease trap before it fills past the limit. This page lists companies that do that work in the Pensacola area.

Hood cleaning companies

Florida enforces the Florida Fire Prevention Code statewide (currently the 8th edition), which adopts NFPA 96 for commercial kitchen exhaust systems. That means the full system must be inspected for grease buildup on a set schedule: monthly for solid fuel cooking, quarterly for high-volume cooking, every six months for most kitchens, and annually for low-volume operations, with cleaning whenever grease is found. Local fire authorities in Pensacola and Escambia County enforce it, and inspectors look for the service tag on the hood showing the company and date of the last service.

Grease trap pumping companies

Sewer service in the Pensacola area comes from the Emerald Coast Utilities Authority (ECUA), and municipal code requires food service establishments to install grease interceptors and maintain them properly. ECUA runs an active FOG program and publicly recognizes compliant restaurants through its Protector of the Environment program. Required pumping frequency and documentation vary by trap size and use, so verify current requirements with ECUA, and keep every hauler manifest on file as your proof of compliance.
