That means the full system must be inspected for grease buildup on a set schedule: monthly for solid fuel cooking, quarterly for high-volume cooking, every six months for most kitchens, and annually for low-volume operations, with cleaning whenever grease is found. Local fire authorities in Pensacola and Escambia County enforce it, and inspectors look for the service tag on the hood showing the company and date of the last service.
