Mobile's FOG program covers fats, oils, and grease going into the sewer system. The working standard is the 25% rule. Once floating grease and settled solids fill a quarter of the trap's liquid depth, it is due for pumping. Keep your manifests, because the hauler's paperwork is your proof of compliance.
